The US and EU Battle.net Shop pages show the same language list for World of Warcraft: Forever:

Which languages are missing?
Italian, Polish and Turkish. Italian stands out: the same shop page lists Italiano for Midnight but not for Forever, so Forever's language support doesn't simply mirror modern WoW's.
If your language isn't supported, English is the obvious fallback. Most guides and videos use the English names for quests, dungeons, items and abilities anyway, so you won't be lost.
How Preferred Online Language works
Forever has no realm list. You pick a ruleset, set a language preference, and the game matches you with players who share it. The setting lives under Options, in Languages and Social, as Preferred Online Language.
According to the screenshot Blizzard shared, it's an account-wide default for the region, so it applies to every character you have there. The dropdown in that screenshot is from the Americas and shows English, LatAm Spanish and Brazilian Portuguese. Blizzard hasn't shown what the European options will look like.

Regions and what they mean for playing with friends
The shop lists four regions for Forever: Americas & Oceania, Europe, Korea and Taiwan. Language preference works inside your region, and rulesets add another layer: Normal, PvP and Roleplaying are each their own ecosystem, with Hardcore coming after launch as a fully separate one.
So if you're rolling with a group, agree on region and ruleset first, then language. Character names are two-part (first and last) and unique per region.
What about translation add-ons?
Community add-ons that translate WoW into unsupported languages exist, but they aren't official and there's no word on whether they'll work with Forever. Add-ons can break after game patches, so check that one has been updated for Forever before you rely on it.
